Haskap Balsamic Pork Tenderloin – A Flavorful Instant Pot Delight! (Haskap Recipe)

People have been asking what else they can do with our delicious haskap juice, aside from just simply drinking it. We do a few things on a regular basis, and this easy-to-prepare dish is one of them.


If you’re looking for a main course that’s sweet, tangy, and savory, this Haskap Balsamic Pork Tenderloin hits all those notes! It's a tasty rendition of various sweet and sour pork recipes and the berry notes of haskap pair beautifully with balsamic vinegar, creating a rich, slightly tart glaze that complements the tender pork.


The best part? This dish comes together quickly and effortlessly in the Instant Pot, making it a perfect weeknight meal or an easy dish for guests. Sometimes we will add in carrots to the pot as well.


What Are Haskap Berries?


Haskap berries, also known as honeyberries, are small, elongated berries with a unique flavor reminiscent of blueberries and raspberries blended together. They are packed with antioxidants and their juice adds a unique fruity brightness to this dish.


Haskap Recipe Ingredients

For the Pork Tenderloin

  • 2 lbs pork tenderloin

  • 2 Tbsp avocado oil (or other high smoke point cooking oil)

  • salt to taste

  • 1 tsp garlic powder

  • 1 tsp thyme

  • 1 tsp oregano

  • 1/4 tsp rosemary


For the Haskap Balsamic Glaze

  • 1/4 cup haskap juice

  • 1/4 cup balsamic vinegar

  • 1/4 cup maple syrup (or 1/2 cup brown sugar)

  • 3/4 cup water


  • 1/4 cup flour + 1/4 cup haskap juice (optional or substitute cornstarch or other thickening agent)


Instructions

1. Season & Sear the Pork

  1. Rub pork tenderloins with oil. Combine spices in a small bowl and season pork on all sides

  2. Set the Instant Pot to “Sauté” mode and once hot, using tongs, add pork.

  3. Sear the pork for about 2-3 minutes per side.


2. Make the Haskap Glaze

  1. Meanwhile, mix together all of the glaze ingredients EXCEPT for the flour and the second 1/4 cup of haskap juice.

  2. Once the pork is seared, add to the pot. Keep the pork submerged in the glaze for best colour.


3. Pressure Cook the Pork

  1. Secure the lid, set the valve to “Sealing”, and cook on High Pressure for 25 minutes.

  2. Let it naturally release for 5 minutes, then do a quick release.


4. Thicken the Sauce (optional)

  • Remove the pork and let it rest for 5 minutes before slicing.

  • Set the Instant Pot to Sauté mode again.

  • Mix the reserved flour into the second 1/4 cup of haskap juice to form a paste.

  • Add haskap juice-flour paste to the pot.

  • Let the sauce thicken and reduce for 2-3 minutes.


5. Serve & Enjoy!

  • Slice the pork and drizzle the haskap balsamic glaze on top. Serve with quinoa or rice, roasted vegetables, or a fresh salad.
